strawberries love swiss roll
We are all stuck at home for the same reason, my first 2 weeks and a half were just fine, actually I enjoyed being home with the kids doing all the delayed stuff I have been delaying for ages, but when it started to be a FORCED condition of staying at home, the anxiety started to get over me, its spring outside yet we need to stuck inside!!! UNFAIR but it is a MUST ! My daughter ( which I call a strawberry little mouse ) kept asking for a strawberry cake, so today I decided to get my self together and bake the cake for her and most…

cheddar flat bread
being a libyan means i have to have bread every single day, its the usual normal thing to have breads as part of each lunch and dinner, for me i dont care what type of bread it is as long as it goes perfectly with the meal, i will always welcome those lovely YUM carbs :). as the everyday struggle starts of what to make for lunch i was really craving some cheesy bread but more like the ftera style, i didnt want it to feel like a real bread but more like something light and flaky, so i was like ok why not mixing both ? and by that…

This is the most popular breakfast dish in all over Libya, it can be eaten with different combinations, the most used are honey and butter or date molasses with olive oil. its known as a tradition to make Aseeda as a breakfast on our prophet (sala allah alayhi wa sallam) birthday memory, a nice way for the whole family to gather around, it is eaten by hand using 2 fingers, which i have to admit i'm sooo bad in doing it the right way lol. as for the ingredients, they are more than simple, basically its made out of just water and flour cooked on low heat in a…

Basil Garlic Focaccia
lately i started using a starter for this recipe coz i noticed the result is way much better, one of the things i noticed is dough rises faster and better, it becomes real fluffy and full of air. even though focaccia is one of the easiest simplest breads out there to make yet for me i think it needs kneading skills, i do use my stand mixer with the kneading hook but still i knead it by hand for like 5 minutes to allow the gluten to develop, and like any other type of breads the more you knead the better this dough has 3 resting periods, one of them…

Labneh Cheese
beside all types of fancy breakfasts, my favorite would be a typical Arabic one, a huge plate of tomatoes, olives, cheese and tea with mint along with freshly baked bread, HEAVEN! i have always been amazed by how they make labneh, those small white cheese balls look so elegant and fancy, so i started making it at home using Libya's local excellent olive oil to add extra flavor, then i play with what so ever i have in hand to coat those little balls and make them more special. i do enjoy playing with flavors when it comes to labneh cheese , this time i picked smocked tunisian peppers i…
