Peri peri sauce

the famous Peri Peri sauce that i was craving for sometime, i checked Nando’s website and surprisingly i discovered they DO share recipes which hit me to why NOT, why cant i just make the sauce at home ? so i did some research and came up with 3 recipes, slightly different but after trying and trying i came up with my own recipe that i THINK its 95% close to Nando’s or at least  it was satisfying to my craving lol.

anyways, this will make a good patch and you can manage how spicy and hot you want it to be by playing with pepper types amounts.

Recipe

 

 

Ingredients

2 red onions, peeled and chopped
1 head of garlic, cloves peeled and chopped
1 cup African bird’s eye chillies, seeds removed
2 red peppers, seeds removed and chopped
3 ripe tomatoes, skins removed and chopped
4 tablespoons olive oil
juice and zest of 3 lemons
⅓ cup red grapes vinegar
2 tablespoons sugar
1 tablespoon salt
1 teaspoon black pepper
1 tablespoon dried oregano
1 tablespoon paprika

 

Method:


Combine all the ingredients in the bowl of a food processor/blender and mix until all the ingredients are finely chopped and the mixture is kind of soft but not too soft.
Transfer to a saucepan over medium heat and simmer for 20 minutes, stirring every few minutes to prevent the sauce from burning.
After 20 minutes, check the seasoning and adjust specially for the salt. The sauce should have a kick of spice and sourness from the lemon and vinegar.
Pour into jars/bottles and keep in the refrigerator for up to 2 weeks

نحطوا كل المكونات في الخلاط الكهربائي و نضربوهم كويس لين يولي القوام شبه ناعم

نحولو الخليط في طنجرة على نار هادية و نخلوه لمدة تقريبا 20 دقيق او لين اغلب السوائل الللي فيه تتبخر و بعدها نفرغوه في فازوات و لو تبوه يقعد مدة فرغوه في الفازات و هو سخون و سكروه على طول

الخلطة مفروض يكون طعمها متجانس بين الحامض و الحار من الليمون و الخل و الفلفلل *

2م.ك سكر

1 م.ص ملح

1م.ص فلفل اسود

1 م.ص زعتر بري

1 م.ص بابريكا او فلفل احمر بودرة

المقادير:

2 بصل احمر مقشر و مقطع قطع

1 راس ثوم كامل مقشر

2 كوب فلفل متوسط احمر حار منزوع البذور و مقطع

2 فلفل عادي احمر منزوع البذور و مقطع

3 قطع طماطم مقشرة من غير لب

4 م.ك زيت زيتون

بشر و عصير 3 ليمونات

1/3 كوب خل عنب احمر
