    Peri Peri grilled chicken sandwiches

    OK so to be honest i'm not a big fan of spicy food, so i make my peri peri sauce medium hot, its just i think when its too spicy or lets say too hot it kills the flavor, its more like a fire in my mouth and i taste NOTHING lol so anyways, i used the sauce to marinate the chicken, it became super tender, grilled it for like 3 minutes on each side and the taste was amazing, sour, hot and moist chicken. i have posted a recipe on my super easy flat bread, typical Arabic bread that i usually use as a quick solution for sandwiches or…

    Konafa with Qishta

    seriously!, when it comes to my konafa recipe i'm so SO so PROUD of me lol, i cant count the time i tried konafa recipes and couldn't get the result i wanted, either too dry, too hard to cut it in a nice way ..... and so on. this konafa recipe is soooo perfect, the filling can be changed into nuts or even cheese, the result will deffently be pleasing, not too greasy nor too sweet. for the Qishta and cheese filling it better be served hot or at least warm, no reason but it more YUMY when its warm :)))

    this is my super life save bread, doesn't require any effort, no techniques nor complicated ingredients and can be used in so many ways. all you need to do stay away from anything greasy while making it to allow it to Buff while cooking, other than that i just love how it buffs up every time i put it on the pan, then i make sandwiches with it such as shawrma or falafel, or i simply cut it into triangles to place them aside with dippings.

    a perfect dough that remains soft after baking has been a nightmare for me, i tried soooo many recipes, different ingredients and even different baking ways, i kept failing in getting the result i was wishing for, a soft dough i can fill with anything and stays soft !! anyways, finally i found it, i have to say the Yogurt in this dough works like magic, adding BP does the job too beside the yeast, so i just fill it with what so ever i have in hand and shape it as i desire for the occasion, tuna, spinach or even feta cheese will do fine. its my basic dough!

    Peri peri sauce

    the famous Peri Peri sauce that i was craving for sometime, i checked Nando's website and surprisingly i discovered they DO share recipes which hit me to why NOT, why cant i just make the sauce at home ? so i did some research and came up with 3 recipes, slightly different but after trying and trying i came up with my own recipe that i THINK its 95% close to Nando's or at least  it was satisfying to my craving lol. anyways, this will make a good patch and you can manage how spicy and hot you want it to be by playing with pepper types amounts.

    Semolina Mhalabia

    we all know its not Ramadan without mhalabia on the table special for Suhur, i just love how thick and creamy they are, too many different flavors and decorating styles. i remember the first time i tried this recipe was at my parents house made by their old friend, that was YEARS ago but i still remember how good it tasted, i made a little twist to it by adding 2 tablespoons of sugar to the basic ingredients and i just like to serve it as individual glasses or cups. what i love about this Semolina Mhalabia is the creamy rich texture yet you can control how sweet you want…

    sunflower seeds bread

    this bread surprised me to be honest, i have never used a different type other than the white flour to bake, but this sunflower dark flour made the bread super moist. i must say ( despite my addiction to breads) but kneading the dough is a stress relief method for me, just give it a try and you'll be happy with result coz the more you knead the dough the more the gluten develops and the better your bread will turn after baking.
