Method:
( peache and honey )
Cut the peaches into cubes ( take off the skin if you prefer it skinless ) and pur them in a food processor with the lemon juice, process till smooth, add water and sugar syrup then transform it into a flat container and freeze for at least 3 hours.
Once the mixture starts to get sold use a fork to scratch it or simply put it back in a food processor and pulse once or twice, back to freezer for another 3 hours.
Repeat that for 3 times so you can have that fruity ice crumbs texture.
( lime and mint )
Peel the lime and take the white skin too because that will give it a bitter flavour, put limes and mint in a blender till you get a smooth juice, strain it into a flat container then add the sugar syrup, mix well and freeze for 3 hours.
Once the mixture starts to get sold use a fork to scratch it or simply put it back in a food processor and pulse once or twice, back to freezer for another 3 hours.
Repeat that for 3 times so you can have that fruity ice crumbs texture.
( cantaloupe )
Process the cantaloupe in a food processor till smooth, strain it to get rid of all the fruit puree, add the sugar syrup and mix, put it in the freezer for 3 hours.
