Salted Caramel Thumbnail Cookies

salted caramel, i have been seeing it in so many bloggers recipes, cakes, tarts, cookies and you name it but i have to admit this is the first recipe for me to use it, the combination between the sugar in caramel and salt flakes is surprisingly delicious, like seriously the salt is doing that kick for all the flavors to pop, its sweet and salty at the same time with vanilla flavor, just soo worth it.

so basically it’s thumbnail cookie style, and as usual best way to get all cookies same size is by using ice-cream scooper, specially that i decided to make these cookies a bit bigger than the usual thumbnails ones i used what ever came across my eyes to make those holes for the caramel later.

Ingredients:

 

( For the cookies )

¾ cups butter ( room temperature )

½ sugar

2 egg yolks

1.25 cups flour

1Tbsp. vanilla

 

( For the topping )

Thick Caramel

Sea salt

Method:

Line a baking tray with parchment paper.

In a bowl of your stand mixer ( or by hand ) beat together butter and sugar till light and fluffy, add egg yolks and vanilla and beat for few minutes then add flour.

Form the cookie dough into balls, leaving some space between each, use yours hand or simply use an ice-cream scooper to make sure all cookies are same size, using the back of any kitchen tool you have make holes into each cookie just 4/3 way through, refrigerate for 1 hour.

Pre-heat oven to 160C, rack in the middle.

when the cookies are completely hard and no more soft then they are ready to be baked, bake them till they start to get slightly golden.

Allow the cookies to cool in room temperature then scoop some of the caramel into each cookie hole and sprinkle a pinch of sea salt.

الطريقة:

 

نجهزوا طاجين بورقة زبدة .

بالمضرب الكهربائي او باليد نضربوا الزبدة مع السكر لين يتغير القوام الي قوام كريمي ناعم، نضيفوا عليهم الصفار و نضربوا شوية بعدها الفانيليا و الدقيق.

نشكلوا عجينة البسكويت على هيئة كور صغيرة او نستعملو ملعقة غرف الايس كريم بحيث نضمنوا ان كل البسكويت نفس الحجم و نستفوهم على الطاجين بحيت نخلو فراغ بيناتهم، باستعمال الاصبع او أي أداة مطبخية نديروا حفرة في كل بسكويت بس مش للأخير و نحطوهم في الثلاجة لمدة ساعة تقريبا .

نسخنوا الفرن على 160 درجة مئوية و الرق في النص.

بعد ما يجمد البسكويت تماما ندخلوه الفرن على طول لمدة 10 دقايق او لين يبدا يتحمر شوية، يترك ليبرد بعدين نحطوا شوية من الكرامل في كل بسكويت و نرشو عليهم الملح.

المقادير:

( للبسكويت )

¾ كوب زبدة بحرارة الغرفة

½ كوب سكر

2 صفار بيض

1.25 كوب دقيق

1 م.ك فانيليا

 ( للحشوة )

كراميل

ملح بحر خشن
