Pavlova

i know many people will go crazy and loose their minds over any chocolaty desserts, the thing is i dont!! but if you show me something full of fruits specially lemons, strawberries, oh if you do Raspberry i will definitely go CRAZY lol.
i love meringues and i usually make them for my kids as a somehow “healthy” candy ( i knoooow full of sugar is not healthy at all ) but this time i took the challenge to try the Pavlova and i guess its as easy as i didnt expect! just few tricky tricks and there you go something amazingly light, sweet and FRESH

ingredients:

Pavlova
4 egg whites
1 cup super fine sugar
½ tsps. Cream of tartar
½ Tbsps. corn starch
Strawberries

Lemon curd
3 whole eggs
¾ cup sugar
1/3 cup fresh lemon juice
2 Tbsps. lemon zest
4 Tbsps. butter

Note :
To be able to make the same size Pavlova, simple draw circles on the parchment paper then flip it on the other side so the ink wont stick to the Pavlova with the oven heat while baking, now you can fill up the circles with the batter easily

Method:
– Pre-heat oven to 100 C, place the rack on middle and line a baking tray with parchment paper.
– In an electric mixer beat the egg white on a slow speed till it starts to create a white foam, start adding the sugar gradually allowing it to beat after each addition, add cream of tartar, once the sugar is over start speeding up the mixer till you get a thick creamy and shiny texture.
– Fold in using a spatula the vanilla and corn-starch slowing, fill a piping bag with the batter and start drawing a circle then fill it, then another circle one the edge which will lead into a shape similar to a packet.
– Bake for 60-70 mins or until they become hard when you touch them, turn off the oven and leave the door ajar allowing then to cool.

– While the Pavlova is in the oven, make the lemon curd.
In a stain steal bowl over a sauce pan with simmering water, mix eggs, sugar and lemon juice, keep mixing slowing till it becomes thick, take off the heat and immediately pour through a fine strainer to remove any lumps, add butter and lemon zest, mix well and leave to cool.
– Before serving, Spoon some lemon curd on the Pavlova and decorate with strawberries.

المقادير 

البافلوفا

4 بياض بيض

1 كوب سكر ابيض

½ م.ص بودرة كريم التارتار

½ م.ك نشا الذرة

فراولة

 صوص الليمون:

3 بيض كامل

¾ كوب سكر

1/3 كوب عصير ليمون طازج

2 م.ك بشر ليمون

4 م.ك زبدة

​الطريقة:

نسخنوا الفرن على 100 درجة مئوية، الرف في النص و نجهزا طاجين بورقة زبدة.

في الخلاط الكهربائي نضربوا البياض بسرعة منخفضة لين يتغير الى رغوة بيضا، نبدو نضيفوا السكر بالتدريج على شكل دفعات و نخلوهم يضربوا كويس بين كل دفعة و دفعة، نضيفوا بودرة كريمة التارتار و نزيدوا السرعة بالتدريج لين تولي سريعة نوعا ما و يبدا المزيج غليظ و يلمع.

نضيفوا الفانيليا و النشا و نحركوهم بالسباتولا من تحت لفوق لين يتجانس الخليط و نعبوه في كيس حلواني، على الطاجين اللي مجهزينه نشكلوا بالخليط متاع البافلوفا دائرة مصمتة و دائرة ثانية فوقها على المحيط بس يعني الشكل النهائي بيكون زي السلة فيها فراغ في النص للحشوة.

ندخلوهم الفرن لمدة تتراوح بين 60-70 دقيقة او بعد ال 60 دقيقة نجربوا نمسوهم لو جفوا كويس نسكروا الفرن و نخلوهم يبردوا داخله مع باب الفرن مفتوح.

في الوقت اللي البافلوفا فيه في الفرن نجهوا صوص الليمون.

في اناء ستينستيل على طنجرة فيها امية تغلي على نار هادية نخلطوا البيض و السكر و عصير الليمون كويس و نستمروا في التحريك لين يولي القوام غليظ.

انزلوها من عالطنجرة و نصفوها في اناء اخر و نضيفوا بشر الليمون و الزبدة و نحركوا كويس، خلوها تبرد و كل ما تبرد القوام يزيد يغلاظ.

 قبل التقديم نحطوا شوية من الصوص في الفراغ اللي درناه في البافلوفا و تتزين بالفراولة.

ملاحظة :

الطريقة الاسهل للحصول على نفس الحجم من البافلوفا او المارينج هي برسم دوائر بنفس الحجم على ورق الزبدة و بعدين نقلبوه عشان الحبر اللي رسمنا بيه ما يلصقش في الخليط بحرارة الكوشة
