Lancashire Cookies

this is the kind of recipes that never lets you down, easy with simple ingredients and the result is delicate and elegant!

i usually make these cookies for tea parties or even for my kids to play with, like they choose their favorite jam to stick the two cookies and cover them with sugar sprinkles then eat what they have made, its kindda mess but some how super fun :)))

for the past 3 years i added it to my Eid sweets menu as it can be baked ahead of time and just finish the jam gluing part in the Eid morning.

 

Let them cool completely before you glue each two with the jam, and if you want to store them them do it before the jam part in a good container.

recipe

Ingredients:

¾ cup powdered sugar

1 cup corn starch

1.5 cups flour

½ cup melted butter

½ cup vegetable oil

1 tsp. B.P

1 Tbsp. vanilla

1 whole egg

 

Fruit jam

½ cup Almonds toasted and finally chopped

Method:

Pre-heat oven to 160 C , rack in the middle and line a baking sheet with parchment paper.

In a bowl using a hand mixer, whisk together butter, oil, egg and sugar till well combined then add the rest of ingredients ( flour, corn starch, vanilla, B.P) mix well by hand to get a nice soft dough that can be formed easily into balls.

Make small equal in size balls (about a 1.5 cm) and place them on the baking tray, leave some space between each because they will become bigger while baking.

Bake for 15 mins or till they start to crack and change in colour, don’t let them brown!

Let them cool in room temperature completely then add some jam on cookie and glue another one to it, squeeze well so the extra jam will come out of the sides then roll them into the almonds.

لو تبو تحفظوه، افضل شي هو انكم تحطوه في حافظة تتسكر كويس من غير ما تحطوله المربى و تخلوا الخطوة هادي مع تزيينه باللوز قبل التقديم .

الطريقة :

نسخنوا الفرن على 160 درجة مئوية و نحطوا الرف في النص

نخلطوا الزبدة و الزيت و السكر مع بعض و نضيفولهم البيضة و نضربوا باليد شوية بعدين باقي المكونات اللي هي الدقيق و النشا و البيكينج باودر و الفانيليا لين تتكون عجينة شبيهة بالغريبة يعني تتشكل و مش يابسة ( و هادي تعتمد على نوع الدقيق )

نشكلو العجينة على شكل كور صغار ( لانهم حيكبروا لما يطيبوا ) و ندخلوهم الفرن لين يتحمروا شوية

بعد ما يبردوا تماما نلصقوا كل اثنين مع بعض بالمربى و على طول نلفوه في اللوز عشان يلصق في الزايد من المربى

المقادير:

¾ كوب سكر بودرة

1 كوب نشا

1.5 كوب دقيق

½ كوب زبدة ذائبة

½ كوب زيت

1 م.ص بيكينج باودر

1 م.ك فانيليا

بيضة

مربى
